Dry cured meat from the thick neck/shoulder of the pig - capicollo literally mens top of neck. Also known as coppa, capocollo, it is a whole muscle cured meat and the porcine equivalent of beef bresaola. Tender, slightly sweet, and the peppercorns also give the meat the perfect level of bite.
