Maggie's Round is their take on an Alpine toma from Italy. Their unpasteurized cow's milk is st, and allowed to age for about 4 months. The reuslt is a beautiful natural rind, a milky grassy frehsness, with a slight tang on the finish.

All of our cheeses are cut and wrapped on order in 0.5 lb increments. We wrap them carefully in our double-lined cheese paper, which allows the cheese to breathe.
