Mrs Kirkham's Lancashire
Description: The only unpasteurized, traditionally made, Lancashire cheese in existance. Now made by Graham Kirkham in his new dairy near Preston, Lancashire, he still stays true to his mothers recipe.
The milk from an evening and morning milking is used, and the slow make process competes whey drainage with acidity build up (over about 9 hours).
This careful process gives rise to the classic buttery tasting, slightly tangy on the finish, and divinely crumbly cheese.
There is nothing like it anywhere else in the world.
Made with unpasteurized cow's milk, using traditional rennet.
All our cheese are cut and wrapped on demand in 0.5 lb increments. We wrap them carefully in our double lined cheese paper, which allows the cheese to breathe. If the cheese stays wrapped tightly in your home refrigerator, it will provide a lifetime of a couple of weeks after arrival.
