Shelburne Farms Clothbound Cheddar
Description: From their herd of Brown Swiss cows, the cheesemakers at Shelburne Farms in Vermont, make a few cheddars. Their clothbound, we feel, is their best cheese.
It's a full expression of the terroir of the hills and fields of Vermont, and the richness of the Brown Swiss cow's unpasteriuzed milk. It's big, beefy and brothy - and very much in the vein of the classic English Cheddars, like the Westcombe.
You didn't know American Cheddar can taste like this - but it can, and it does. You will love it.
Made from unpasteruized cow's milk, and traditional animal rennet.
All our cheese are cut and wrapped on demand in 0.5 lb increments. We wrap them carefully in our double lined cheese paper, which allows the cheese to breathe. If the cheese stays wrapped tightly in your home refrigerator, it will provide a lifetime of a couple of weeks after arrival.
